Can you believe in my years of eating gluten free, I'd not yet made beans and rice until yesterday?! I was scared of trying to figure out how to prepare the dried, hard beans. Really, that was just silly. They were quite simple to make. I soaked the beans over night, and after getting advice from my sister, I simmered them while I made the rice.
After adding ground turkey, onions, and a bunch of seasonings, here's the end result:

Tim and I both declared it yummy!

I love doing beans from "fresh", they taste so much better and are a way to make and inexpensive food even cheaper!
