Oven Fried Chicken

I tried a new recipe for dinner yesterday, and Tim and I both declared it a keeper! I really miss breaded foods, chicken expecially, so I thought I ought to pluck up the courage and try making some myself. I know, I know; I'm 25 and I probably should've made fried chicken at some point in my life, but I haven't. Until now.

Oven Fried Chicken

2 parts rice flour (1/2 cup)
2 parts sorghum flour (1/2 cup)
1 part potato starch (1/4 cup)
Paprika
Sea salt
Pepper
1/3 cup chicken broth
2 tablespoons butter
2 chicken breasts

(I made this just for the two of us, so I wrote the recipes in "parts" to make it easier to cook for more people)

Preheat the oven to 425. Melt the butter in the bottom of the baking dish. Add the chicken broth to the butter. Mix all of the dry ingredients in a big zipper bag. Shake up each of the breasts in the bag to fully coat them. Place the chicken in the baking dish and bake for 30 minutes. Take out of the oven and flip the chicken pieces over; bake for 30 more minutes. Check the largest piece for doneness. Serve immediately.

This is "C" or Cindy again. I didn't realize you had rice flour recipes on your site. My first trip to the health food store was quite defeating--everything was strange and very expensive if you wanted to experiment. I forgot to mention he is also highly allergic to nuts. Once I made sure a food was free of everything he couldn't have, the pool shrunk further. I really appreciate that you have the experimenting done!

Would you have any specific recommendations on brands of rice flour, xanthum gum etc? I know that I just need to bite the bullet and buy the stuff--it won't be so bad if I don't feel like I'm buying blind. My list of safe recipes is only about a dozen down from 60-some prior to diagnosis.

Is there a good place to order online? I feel that our local health food store is well-meaning but not well-equipped to deal with his allergy situation. For example, they looked a little confused that I was returning a product supposedly free of everything but listed possible egg contamination in tiny letters.

The chicken looks good. He misses chicken nuggets!

Hi Everybody,
I've found that the fast food chicken joints, such as, KFC, Popeye's, Williams, etc., don't agree with me anymore. This looks like chicken worth trying. Love Dad :-)
