We had chicken nuggets tonight (instead of yesterday) for dinner. I followed this recipe here that I found on Gluten Free Frugal’s website.
The nuggets turned out really good. They do look a bit unusual, but the second you bite into them, you know you’ve found a keeper!

Those nuggets look great Sarah! Glad that you are able to have such a varied diet despite your food intolerance.
We went to Fugitti's - it's just about 7 miles or so south on Highway 21. They have TONS of apples - it's not a fancy orchard, they're just in their garage. Seems to be a retired couple - he's from Italy I think and had quite an accent. It was REALLY fun - they were tasty apples and he gave us lots of samples and even a bag of seconds :)
