Rice and Lentil Hotdish

Rice and Lentil Hotdish

1 1/2 cups uncooked rice
1 cup uncooked lentils
3 cups gluten free chicken broth
3 cups water (naturally gluten free, haha)
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1/8 teaspoon coriander
1/8 teaspoon dill

Put all ingredients in a rice cooker and cook just as you would when cooking rice.

This made enough for dinner for Tim and I with leftovers for lunch tomorrow.

Thanks to Sister Rae for introducing me to lentils. They're not as scary as I thought they'd be. They're a cheap and tasty source of protein.

i'm still REALLY Trying to like lentils. For some reason my husband and I both just don't enjoy the taste of them as much as I would like! We never want seconds! I might be willing to try this though!! I try them 2-3 times a year to see if we'll like them any better! lol
